With the same exact grid configuration my grid is working after I updated the script to use 2049 build instead of 2023.

One last question, in your DefinedColumns.html, you have the script refererence to 1010 build like this:

<script type="text/javascript" src="http://cdn-na.infragistics.com/jquery/20121/1010/js/infragistics.loader.js"></script>

It should be 2049 right ? just like the one in loader or is there a reason you're using 1010 ?

"Nothing is impossible, but it's not very likely" (a quote from AskANinja :)) - this is the case here: the MVC wrapper is highly unlikely to be the culprit - especially in such a straight-forward scenario.
In order to prove this, I have attached an MVC sample project to my reply that contains the configuration you wish to use for the grid's features.
(just a side note: having column settings for any feature like Updating in your case won't accomplish anything - column settings are used in order to express a deviation from a feature's regular behavior towards a given column - like saying that ID can be read only).

No - the igGrid's MVC wrapper takes care of that - you can take a look at the JavaScript that's being generated for the grid when the loader is in use.

I wasn't able to reproduce the error you mentioned with my sample so I'll presume that the problem is caused by a tiny misconfiguration on your end. 
Feel free to alter my sample to bring it closer to your scenario - if you are able to reproduce the issue, please let me know.

Just a few of things before I wrap up:
1. I've included the json2.js script because IE7 doesn't have it built-in like its newer versions and competitors (Firefox and Chrome for example)
2. I've included a custom build of the Modernizr JS library - this is the essential piece of the legacy-browser compatibility we have. I strongly suggest you head over to the library's download section and prepare a custom builds with all tests mentioned there (the css-boxsizing test from the "Non-core detects" section is crucial for the row selectors feature under IE7)
3. I've updated the CSS and JS references to the latest Service Release of the 2012.1 volume release which we just released yesterday (yay!). Using the previous SR build also works fine, but referencing the latest one is what I'd personally recommend.
