In order to change the color of a specific bar to some others, you may want to set true to isCustomCategoryStyleAllowed and a function to assigningCategoryStyle in IgrBarSeries. And in the function, write your code to customize the color:

<IgrDataChart ...>
  ...
  <IgrBarSeries ...
    isCustomCategoryStyleAllowed="true"
    assigningCategoryStyle={this.onAssigningCategoryStyle} />
  ...
</IgrDataChart>
