Can you tell me what the default brushes (colors) are that are used to fill pie chart segments when no other options are set? I want to keep this color scheme but hard code the colors for certain labels but cannot see how to work out what these brushes are?

There is currently no way to get that information since they are dynamically generated using and internal algorithm based on the StartPaletteBrush and EndPaletteBrush properties. Your only options to know the exact used Brushes is to either set them explicitly on your DataPoints or have it done by your own algorithm.

I like the color scheme you guys have on your pie chart samples. how do i apply that using the styles file, or in XAML? Do i still have to use the StartPaletteBrush and EndPaletteBrush properties? the sater and end palettes seems to limit the color scheme to two colors and their "in-betweens".
I want exactly what you have in the samples.
