No, there is no way to change the width; I believe it was based on what we observed in MS Outlook. If you like you can visit http://devcenter.infragistics.com/Protected/RequestFeature.aspx and submit a request for the feature. Note that if not all of the information is visible in the tooltip, that is a bug and you should report it.
