Is there such a property in the WinGrid?
I'm supplying my datasource at runtime, and even though I've created the schema, columns that I did not include just showed up on my UltraGrid, is there some setting that I'm missing?

I'm not sure what you mean by this. You might be looking for the Nullable property on the UltraGridColumn.
I just saw this portion in the link you pasted:
Important Note: The DataSource designer displays properties for the Band such as AllowAdd, AllowDelete, ReadOnly, and Tag. It also displays Column properties such as AllowDBNull, DataType, DefaultValue, ReadOnly, and Tag. These properties are displayed because they are meaningful if you are designing an actual DataSource. When defining a schema, however, they have no meaning. All of these settings will be picked up from the actual DataSource when the grid is bound at run-time. Setting any of these properties will have no effect, and the settings will not be maintained.
