Can I change the default font size and type across all items within an appstylist?

I beleive in WinForms, the role you want is called Base, rather than Shared. But it's the same concept.

yes you can do this. Use the Role "Shared" in AppStylist. Everything you put in here will be globally applied. Be aware that if you set a setting for a Role directly (f.e. the WebGrid) this will override the Shared setting. Even when you start with an empty StyleSet some default settings are applied to the controls directly. Thus you have to remove them.
